These chicken are a heritage French breed, called La Belle Rouge, and are raised on pastures on small family farms in Pennsylvania where they're fed regeneratively-raised grains. Naturally slower-growing, these chicken have a much fuller, richer flavor, larger legs, and less white meat than conventional chicken.
Season with your favorite herbs, spices, or marinade and cook on the grill or oven until the internal temperature reaches 165.
