Walden Local Butcher Shop
We are just 8 days away from opening our new retail butcher shop, located in Boston’s South End on Shawmut Ave. It will be a truly old-school butcher shop that brings in whole sides of 100% grass-fed beef, pasture raised pork, lamb and chicken and breaks them down from scratch. Unfortunately, that is very rare these days, most shops simply slice sub-primals into steaks, which limits the flexibility of offering the full range of cuts.
Head Butcher Tommy Trainor joins us from Mario Batali’s Babbo restaurant; he is joined by Krissy Scommegna from Primal Supply Meats of Philadelphia and Rob McCarthy who has worked as our wholesale rep for the past few years.
After almost four years in business we found ourselves lacking a physical location to demonstrate to customers what we do: work with our partner farms in New England and New York to produce the highest quality meat in the region with the highest standards and principles, custom cut them to customers’ specifications, and educate consumers about what choices they have when it comes to meat production. The store is intended to do all of the above and more!
Lookout for educational opportunities and demonstrations on breaking down whole animals, sausage making, cooking, meat + wine pairings, taste testing and many others!
Come visit us anytime, Monday-Saturday 12-8pm and Sundays 12-5pm.
