Skirt steak is another cut that we recommend tenderizing by using a marinade. This is courtesy of our friend Michael, and it will result in a sweet and slightly spicy dish that goes great over bitter salad greens… it will also make great leftover sandwiches for lunch!


1/2 cup light brown sugar

1 cup balsamic vinegar

1/4 cup Basecamp Sweet Hot Mustard

1 teaspoon red pepper flakes (optional)

Dash of salt and pepper


Throw all the contents in a Tupperware container or bag and shake well. Add steak and marinate overnight. This is great on the grill, however — because there’s sugar – it’s quick to burn so watch it closely.
